Power packed pancake mix

Better Than Bisquick Mix 


3 c. whole wheat flour (or flour of your choice)

3/4 c. almond flour

3 Tbs. ground flax seed

3 Tbs. coconut/date or organic sugar

3 Tbs. baking powder

½ tsp. Salt


Combine all the ingredients in a gallon size ziplock bag or container. Shake or stir until thoroughly combined, a few lumps are okay. Store in an airtight container. Makes 4 cups. 1 cup of mix makes about 7 pancakes.

For Pancakes:

Mix 1 part baking mix to 1 part plant-based milk. Cook on pre-heated skillet over medium heat (350 degrees) until bubbles have popped and edges begin to look dry. Flip and cook for about another minute. Enjoy with berry compote or pure maple syrup…peanut butter on top makes them extra tasty.


While preparing for our camping trip this summer, I didn't have a lot of time or space to pack fancy food. We were car camping and had a van full of kids and gear. When that is the case, I like to use simple ingredients that don't need to stay cold.


We like to do "pancake Friday's" when we are at home, so I thought that would be the perfect breakfast for our camping trip. Worrying about having all the ingredients to make while we were in the woods, did not sound fun. Instead, I mixed up my super simple dry pancake mix in a gallon size ziplock bag. It makes the perfect amount for our family of 8. (Usually leftovers are good at home, but not on campouts.) I grabbed a quart of shelf stable Unsweetened Vanilla Almond Milk, some natural peanut butter and a container of real maple syrup. Breakfast prep was done!


At the campsite, we were thrilled to be surrounded by beautiful, tasty, wild huckleberries. We put them in our pancakes and they were so yummy!! If you have never had huckleberries, they are a bit like blueberries, but smaller and packed with flavor, especially when put in baked goods. They are also a bit more dense. No wonder the bears love them! We were afraid when the pancakes were cooking, it would bring the bears. Our kids were sad to not see any on this trip, but we heard they were in the area.


We topped our pancakes with peanut butter for an extra protein boost and cooked up some dehydrated hash brown to the side. I didn't have to clean out multiple measuring cups or spoons. The pancakes were mixed right in the bag the mix was in, so I didn't even have a messy batter bowl to wash. Normally I don't like to use one time use plastics, but for camping, they sure make things easier for the messy stuff.


With a tiny bit of extra planning, and no added mess, we had a nutritious breakfast that was satisfying and delicious! It was much better than the white, rubbery, bland Bisquick Mix I used to bring along. These pancakes are fluffy, full of fiber, omega-3 fatty acids to support brain health (from the flax) and extra protein from the whole grains and almond flour. Not to mention, no refined oil or added cholesterol from messy eggs. A perfect breakfast for home and camping.
